Chamomile Gin Fizz

A recipe shared by the Cordis Resident Tea Sommelier, it has a fun chamomile tea-infused simple syrup, which adds the floral flavour to the drink, without overpowering things. Don’t worry, this doesn’t taste like tea!

INGREDIENTS
60ml Chamomile infused syrup
45ml Terps & Co 0% gin-like
30ml Lemon juice
1 Egg white
50ml Soda water

Calendula petals for garnish

FOR THE CHAMOMILE SYRUP
1 cup water 2 chamomile tea bags
½ cup sugar

METHOD

Brew chamomile tea and let the teabag steep for 10 minutes.

To make syrup, use equal parts boiling water and sugar and keep stirring until all sugar is dissolved then pour through a mesh strainer.

Top the chamomile tea with some of the syrup based on sweetness preference.

Dry shake all the ingredients (shaking the ingredients without ice), add ice and shake again.

Double strain into a chilled glass.

Top up with soda water, garnish with Calendula petals. Smooth, light, floral, and delicious with foam on top! 🌺 Enjoy
